  1. En un recipiente mezclamos la sal, romero, azúcar y pimienta
  2. En otro recipiente ponemos papel film y colocamos una capa de sal encima pondremos el salmón con la piel hacia abajo, colocamos otra capa de sal hasta cubrir el salmón y añadimos el jugo de limón y el mezcal, tapamos con film enseguida colocamos algo pesado sobre el recipiente, llevamos a refrigeración
  3. Una vez que pasaron 24 horas sacamos el salmón y retiramos la sal para escurrirla con ayuda de un colador para extraer el líquido que soltó, enseguida volvemos a poner una capa de sal abajo y el salmón lo ponemos de lado opuesto(con la piel hacia arriba y cubrimos con la misma sal y el líquido lo volvemos agregar sobre el Salmón tapamos con papel film este procedimiento se hará por 4 días
  4. Ya que pasaron los 4 días sacamos el salmón de la sal y pasamos por el chorro de agua para retirar el exceso de sal, retiramos la piel del Salmón y cortamos en láminas
  5. Con el bolillo hacemos una tapa y colocamos los acompañamientos
