- Antes de todo nuestro procedimiento hidratamos la grenetina con los 40ml de agua y deja a un lado.
- Primero haremos una pate a bome con las yemas y el azúcar. Para esto primero batimos las yemas hasta que doblen su tamaño y se pongan pálidas.
- Para el jarabe de bola suave, ponemos al fuego el azúcar con el agua y esperamos a que esté comience a sacar burbujas.
- Sabremos que está listo cuando llegue a una temperatura de 115° o tomar un poco con una cuchara y meterla en agua. Si podemos manipularla está lista, pero si se cristaliza deberemos de volver a comenzar
- Una vez que esté listo el jarabe de bola suave lo agregamos a las yemas en forma de hilo mientras las estamos batiendo.
- Seguir batiendo en velocidad alta hasta que ésta suba.
- Volvemos a calentar la grenetina y se la agregamos al pate a bombe. En este punto podemos agregarle el saborizante que queramos.
- Por otro lado debemos tener listo el queso crema ya acremado.
- Agregamos el pate a bombe al queso crema y revolvemos.
- Batimos la crema Lyncott (debe de estar fría y de preferencia en un baño Maria invertido, es decir en hielos) y agregamos a la mezcla.
- Para formar el tiramisú en un plato y con ayuda de un aro, sumergimos las soletas en el jarabe de café (mezclamos todos los ingredientes) y hacemos una cama.
- Agregamos el relleno y espolvoreamos un poco de cocoa en polvo. Repetimos hasta acabar con las soletas y el relleno. Llevamos a refrigeración por una 1hr.
- Pasamos un cuchillos por las orillas, desmontamos y terminamos de decorar al gusto.
