- Como primer paso elaboramos nuestra mise en place lo que permite trabajar de manera ordenada y más fácil


- Para el bizcocho
Acremamos la mantequilla con el azúcar con ayuda de la batidora, la mantequilla debe estar preferiblemente a temperatura ambiente


- Una vez teniendo la mantequilla lista, agregamos las yemas de picó en poco, alternando con el chocolate el cual ya debe estar previamente derretido



- La mezcla debe quedar cremosa y firme, una vez obtenida la consistencia necesaria reservamos


- Elaboramos un merengue francés, para lo que batimos las claras, una vez levantada agregamos azúcar y seguimos batiendo hasta que quede firme



- Ahora de manera envolvente agregamos él merengue francés a las yemas alternando con la harina a la cual le agregamos el Royal.



- Una vez lista nuestra mezcla, la colocamos en el molde y llevamos al horno por 30 minutos a 180 grados centígrados

- En lo que esperamos elaboramos uña jarabe de canela, colocamos 1/2 litros de agua en un recipiente, añadimos 100 gr de azúcar y rajas de canela



- Una vez listo nuestro bizcocho, emparejamos y sacamos tres capas



- Remojamos las capas con el jarabe de canela



- Batimos la crema, y le colocamos una capa de crema batida en la primera capa de pastel y durazno y repetimos lo mismo con la segunda capa.



- Una vez listo comenzamos alisar nuestro pastel con la crema batida



- Ahora comenzamos a decorar, la decoración es al gusto
