  1. Primero pesaremos los ingredientes para el poolish, en un bowl pon la harina y la levadura.
  2. Posteriormente agrega de a poco el agua y ve mezclando hasta que sea homogénea, la mezcla queda un poco líquida.
  3. Deja fermentar de 40 minutos a 1 hora el poolish, hasta que la parte de arriba se vea espumosa.
  4. Mezcla todos los polvos para la masa y has un volcán, puedes hacerlo en un bowl o en una mesa perfectamente limpia.
  5. Agrega poco a poco el poolish, procura incorpora todo con una sola mano, así hasta incorporar todo.
  6. Después agrega el aceite de olivo de a poco, al final obtendremos una masa suave.
  7. Reposa la masa por aproximadamente 1 hora, hasta que doble su tamaño, cuando doble su tamaño la pinchamos y amasamos para sacar el aire.
  8. Estira la masa en una mesa limpia y espolvorea un poco de harina sobre ella previamente, igual sobre la masa y un poco en tu mano, la masa no debe quedar tan delgada pero tampoco muy gruesa.
  9. Cuadra tu masa con ayuda de una raspa o si no tienes con un cuchillo y córtala en rectángulos.
  10. Coloca un poco de aceite de olivo sobre ella, yo añadí un poco de sal, pimienta y ajonjolí pero eso es al gusto. Déjalas fermentar otros 40 minutos o 1 hora, hasta que doble su tamaño.
  11. Ya que han doblado su tamaño, llévalas al horno de 15 a 20 minutos a 180°C
  12. Te darás cuenta que están listas porque la parte de abajo debe estar dorada. Acompañala de tus ingredientes favoritos!
