  1. PASTA:
    En un bowl colocar la harina cernida, agregar los huevos y el aceite de oliva.
    Mezclar y amasar hasta obtener una masa elástica y uniforme.
  2. Dejar reposar la masa por 20 minutos tapada con un trapo húmedo.
  3. Dividir la masa y extenderla con un rodillo hasta que se encuentre aproximadamente de 2 mm de grosor.
  4. Para el relleno:
    Hervir la pechuga de pollo en agua y una hoja de laurel y deshebrar.
  5. Cortar la cebolla, el pimiento y jitomates en brunoise.
  6. Acremar el queso crema
  7. Blanquear las espinacas.
  8. En una sartén con el aceite de olivo, saltear las espinacas, cebolla, ajo, pimiento, jitomates y una hoja de laurel.
  9. Añadir la pasta de tomate y el azúcar.
    Esperar 1 minuto y desglasar con vino blanco. Salpimentar y retirar del fuego.
  10. En la masa extendida, colocar la salsa, el queso crema, el pollo y espinacas.
    Tapar con la 2° capa de masa y pegar con agua
  11. Refrigerar la pasta rellena por 4 horas.
    Cocer al dente en agua con sal.
    Servir los ravioles con el resto de la salsa y queso parmesano rallado
